Fruit Cobbler Recipe

I told you I’d be back with this cobbler dessert!I also told you I would blog every Friday, but I missed last week. The lesson here is that you can mostly trust me, just not every time.But let’s not dwell on negative things, hum?I’m here now and that’s all that matters because this dessert is going to make up for everything.Here is why this is your perfect go-to from here on out:It is easy AND simple ( some recipes are either/or). Tacos, for example, are easy because you don’t need to look up a recipe; everyone knows how to season ground beef with Mexican spices and cut lettuce. However, tacos are not simple. There are so many things to cut and chop and grate, which takes multiple steps and plates, and sort of takes a while to prepare before you can finally eat. This cobbler though? It’s easy because all the measurements are in ones (1 stick of butter, 1 cup of flour, 1 cup of sugar, etc), so if you make it one time, you never need to look up the recipe again, because you’ll remember what to do. It is also simple because it only requires melting the butter and greasing the dish as your resident pain-in-the-ass steps, but then all that’s left to do is mix the batter together, pour it into the dish, and then cut a bunch of fresh fruit over the top. Sprinkle it all with sugar and you are done. Five minutes. Seven at the most. And you can double the recipe to feed a crowd and it still only takes seven minutes. It’s the best.Plus (probably most importantly), it’s insanely delicious. I don’t think this needs explaining. Tell me where I’m wrong.It can feed a lot of people - I went over this in point one, yes? Seven minutes and you are done. You’ll volunteer dessert every time at potlucks from here on out.Have I sufficiently convinced you?Chances are you are headed to a BBQ this Labor Day weekend. And chances are, you were probably asked to bring something. I’m going to predict this is on a lot of tables come Monday because, like I just told you, this is the dessert of your dreams.Use any fruit you’d like in this. My favorites are strawberry or peach, but mixed berry and plum are great, too.One last note: I make this gluten-free by using 1 cup of the Cup 4 Cup all purpose gluten free flour, and then adding in 1 1/2 teaspoons baking powder and 1/4 teaspoon salt to make it “self rising flour.”I lied, because remember you can mostly trust me, just not every time, so here is the actual last note: Serve this with ice cream. I feel like I shouldn’t have to tell you that.

Fruit Cobbler

Serves 6Ingredients1 stick butter, melted1 1/4 cup of sugar, divided1 cup self rising flour (see note above for gluten free)1 cup of milk2-3 cups ripe fruit- berries, peaches, plums or anything that tickles your fancyDirectionsPreheat the oven to 350 degrees. Butter a pie dish so nothing sticks. In a bowl, whisk together 1 cup of the sugar, 1 cup flour, and 1 cup milk, then add in the stick of melted butter and whisk to combine.Pour the batter into the pie dish. Pile fresh fruit on top of the batter (the fruit will sink to the bottom during baking) and sprinkle with the remaining 1/4 cup of sugar.That’s it, just put it in the oven to bake for 1 hour until the top is golden.Serve with vanilla ice cream on top and prepare to receive accolades.   Save
